Quick Corn Chowder
Recipe from: again, The Best 30-minute Recipe, by Cook’s Illustrated Magazine

Can’t believe that this was a 30-minute recipe. The result was so creamy and delicious. I didn’t read that it was for 8 servings. So, we got a lot of leftover for another day. Highly recommend this cookbook. I also recommend their The New Best Recipe: All-New Edition with 1,000 Recipes for not-so-quick cooking. 1,000 recipes!!! There’s a little of everything in there. CB already made a terrific roast with a recipe found in the big book.

    I just read the comments from the last post, CB, consider yourself a fortunate man indeed. (I’m sure you already do)
    so…. I may just have to get this book, I’m all about ‘less time for cooking and more time for knitting’ :^) which is why I love soups/stews/casseroles and my beloved crockpot! or the fast and familiar brown rice with roasted or sauteed veggies (I know, the rice takes time to cook but one can always take a little knitting break before getting to the veggies)

      Rice Cooker! It makes life easier! You can cook all kinds of things in there, too. Soup, steam vegies, etc. Brands like Zojirushi, National (Panasonic) are pretty good. :-)

    I made cream of potato soup the other night. Inspired by all the cooking I’m seeing on knitting blogs! Soups are so good this time of year!

    Corn chowder is comfort food of the highest order and yours looks very tasty. It’s been cold and wet out here in the Bay Area so that soup looks really tempting.I think I’m going to have to pick up a few of your cook books since everything looks so good!

      Hey Jane! If you do buy their books, don’t buy too many different titles. They tend to reuse recipes in the books. The two that I suggested will probably give you most of their recipes. :-)
